Restaurant Grease Trap Replacement

A restaurant had an old grease trap in the floor of the kitchen that reached end of life. We cleaned out the old trap and filled the cavity with gravel because the owner did not want the floor jack hammered up. It was possible to install a new low-profile grease trap at floor level. We replaced the piping from the 3-compartment sink and tied it into the new grease trap. And we ran a new vent line so that the drains from the 3-compartment sink and the grease trap were properly vented.
